釜喜屋is a busy, vegan ramen noodle restaurant. Offers many flavors. No onion or garlic used. The owner learned about ramen and soup making in Japan. As of March 2015 shop closes the first 5 days of each month. Open Mon-Thu 11:00am-8:00pm, Sat-Sun 11:00am-8:00pm.

Very good ramen - Edit
The restaurant is small and intimate, and you may have to share a large table with strangers if it is busy. The dining space is very clean and vibrant with a Japanese style.
I ordered the Miso BBQ Pork ramen and it was very good. The broth was very nice but could have used just a little bit more flavor. The noodles were above average and cooked well. The vegan pork is worth the extra cost, although it didn't have much of a BBQ flavor so the name is misleading. The Pork seems to be a homemade product that is quite unique. It has a nice texture and improves the overall enjoyment of the soup. The portion was not too big but certainly acceptable and reasonable for the price.
I absolutely recommend FuShiWu as it is superior to other vegan options in the area near SOGO and the science museum.

This is basically a place that sells big bowls of vegan noodle soup. Most of the dishes are variations on this so if this isn't what you are looking for, consider elsewhere.
I thought this was good food at reasonable prices. I had a kimchi, a tofu starter and 2 of the bowls of soup (shared with someone else of course). This came to under 500 twd. This seemed very reasonable to me. Add your own sesame seeds from the dispenser.

Subtle, elegant flavours - Edit
I went here last night, curious to try some vegan ramen. They have no English menu but the lady – a couple run the place – spoke enough to explain. No rice at all; this is a noodle joint. I asked what was special/classic. She point to the first item, top left-hand corner of the menu (160NTD) and said it was the favourite. It was also the cheapest. I went for it. It was amazing. A milky-coloured broth with various veggies, bean-derived items and seaweed, and noodle of course. Really delicious, subtle flavours. A real treat. Need-to-knows: 160-200NTD per meal, all vegan, limited seating; no English sign out front, btw, but you can probably recognise the Japanese characters/font and decor.
Pros: Delicious, Unique flavours, Lovely owners
Cons: Moderately expensive – for Taiwan, Air-conditioning was a bit too cool, Could be hard to find

Amazingly tasty vegan ramen - Edit
Amazing vegan Japenese-style ramen noodles. This ramen restaurant has apparently been open for a long time, and became a vegan restaurant serving the same ramen noodles a number of years ago when the owner turned vegan. This is the first time I've had vegan ramen (or any Japanese style noodle), so I was very excited to try this place. I ordered spice noodles, which weren't overly spicy but still delicious. I tried my wife & friend's noodle soup, which were also very tasty. The menu is simple (and all in Chinese) but the food delicious, and cheap. Highly recommended.

Better check the open time by phone before you go. They closed every Friday and irregular rest for 4~5 days in a month.
