Great Sushi and Tempura - Edit
The sushi and Tempura were delicious and the pickled ginger was some of the best I’ve had. I was excited to try the soba salad because Takayama is known for soba, however they used an American-style Italian dressing on it which dominated the flavor and made it hard to really appreciate the soba. Staff had a solid understanding of vegetarian and vegan and the chef lived in Texas at some point and spoke solid English and Spanish

Many vegan options- starters, salads and sushi. After I ordered I saw they had a tofu teriyaki steak.
Read moreOrdered a seaweed salad (amazing taste, very small dish), vegetable salad (very good as well, nice portion), japanese pickles (also good, small dish), and three sushi rolls (asked for the vegetables roll without mayo), the rolls were very good.
The restaurant was completely full when we went in, so they immediately said it might be a long time, and apologized few more time.
Pros: Very tasty, Many options, The nicest owners

There are an English menu. You can have four option of rolls. I tried the vegetable California roll and the avocado tempura roll and are amazing. Specially the last one.

There are a few standard vegetarian and vegan sushi options (cucumber, avocado), vegetable tempura and some side dishes (pickles). Unfortunately, the soups contain dashi, i.e. fish broth, which could not be left out. I expected a bit more effort after seeing the sign outside.
