Sol & Ris
Serves meat, vegan options available. Thai and Vietnamese food primarily cooking meat-based dishes, but there is a vegetarian section with around 5 items. Kitchen will make other dishes vegan when requested. The tofu is made in-house. Call ahead and kitchen can make rice noodles. During the week rests from 3-5pm. Open Mon-Thu 11:00am-9:00pm, Fri 11:00am-10:00pm, Sat 1:00pm-10:00pm.

Epic Vegan Lunch Time - Edit
I called them 1 hour in advance (which is always a good thing to do) to ask about vegan lunch options. They were incredibly helpful, gave me 4 (out of the ordinary 6) options and even started making home-made rice noodles for me!
The food (thai yellow curry with tofu and fresh vegetables) was absolutely phenomenal, and actually enough for two meals (you can ask for a doggy bag to take with you what you didn't finish, which makes this a really cheap lunch).
In the evening, I think almost every dish (70+) can be made vegan upon request.
I can really recommend eating at Sol & Ris, lunch as well as dinner!

Cons: Sallad(s) on the side rather uninteresti

Friendly, family run restaurant with a good range of veggie options. The food was clearly freshly prepared from good ingredients; I was a bit disappointed by the lack of spices, so the overall effect was a little bland, but still enjoyable. Very cheap prices.
