On Place Massena at the border between the Old Town and the main shopping street. Tables outside - getting a salad is self-service, but you can order drinks &c from a waiter.

Choose your own ingredients (prices vary from €0.50 to €2.00 per item on top of a €4.50 salad base) and a dressing. Mine came to €10.00 including a bread roll. Large bowl. Food seemed fresh and decent quality.

The salads are customizable, but every topping costs extra and it can add up fast. However, they are delicious and refreshing the Niçois heat!

Smoothies/juices are 5€. The "So Green" veggie juice (apple, celery, cucumber) is light, nutritious and refreshing. The "Vitamix" juice (banana, orange, strawberry) is a sweeter pick-me-up. Both were great!

This is a good restaurant for vegans because you get to mix and match your very own salad, so there will be nothing in it that you don't want to!

It's located at Place Massena, so it's very central and close to the main shopping street and the Promenade des Anglais. Upon entering, there are two counters, one for the salad and one for drinks. The latter one is also where you pay. You can choose a base for the salad, such as green salad or rice. Then you can choose more ingredients. There are many options, many of them meat or dairy, but also many vegan ones: Corn, artichokes, tomatoes, zucchini, cucumber, raisins... In the end you can also choose your dressing, such as olive oil.
There are also many fresh juices and smoothies to choose from. I had a ginger mango juice which was very good. My salad also tasted very well and was much more filling than I had expected! In fact I couldn't even finish it!

Service was very friendly and staff speak good English, in case you struggle with the French names of all those veggies...

The only downside is that I find it a bit expensive. The base of the salad is 4,50€, which is totally ok, and the other ingredients you add cost extra, between 1,50€ and 2,00€. I think 2,00€ for a handful of sliced zucchini is a bit much. Like this, the money really adds up and in the end, your salad could be more expensive than you expected. The juice is also quite expensive, costing 5,00€.
On the other hand, the location is simply perfect and restaurants in Nice are quite expensive in general, so I still recommend a visit here if you are looking for a quick and easy vegan lunch in the centre of Nice!
