Pho Lantern has a lot of clearly marked vegan options. They have daily specials, including $4 Vegan Pho on Wednesdays. The small pho is actually rather filling, so expect leftovers if you upgrade the size. Besides the pho, I usually go with steamed dumplings or a tofu bahn mi (vegans just ask them not to butter the bread).
They're affiliated with a Vietnamese grocer across the street, so stop there after dinner to stock up on tofu, jack fruit, produce, or the magical, soy-based "vegan half chicken."
NOTE: The decor features salt-water fish tanks, so stay away if that's a deal-breaker for you. Also the place has too many TVs for my liking.
