The one with hummus/avocado was sold out.
Panos should really up their game regarding vegan options.
But sometimes there are not so much vegan choices around, and you're pressed for time before taking a train. Then Panis comes in handy.

2021 - I didn't see any vegan labelled options in the counter so asked, and they said they are not offering vegan options atm, since there's no demand. How hard can it be to make a fresh sandwich with eg hummus or vegs?

I think (hope) that once more commuters start to go back to the offices again (this is in a train station), the offer will expand again. Normally Panos (chain) always has vegan options.
