Good food and inexpensive - Edit
I went here with a friend on a weekday afternoon (like 3:30 or 4 pm) and it was already starting to get crowded while we were eating, so be aware of that. I got a spicy curry noodle soup with tofu, my friend got a rice plate, and we shared some mock duck spring rolls. Everything was very good. The space can get loud when crowded and there’s not much “ambience” but for a good casual meal we both enjoyed it. Several vegan options, veggie dishes are labeled and most can be made with either fried tofu or mock duck.

Love this place! - Edit
I loved that there were multiple vegan options to choose from! The service was so nice as well, and they're knowledgeable about what is vegan. The mock duck banh mi was really good, just make sure to order without pate and mayo. I find that a lot of vegan banh mis are dry without a pate or mayo replacement, but that was not the case for the banh mi I had here. I would definitely come back to try other items on the menu.

Fresh, homemade Vietnamese food - Edit
My Huong is a family-run Vietnamese spot that serves some of the better vegan-friendly Vietnamese food in the Twin Cities. Make sure to try the curry noodle soup and the vegan noodle soup. They also have stir-frys and banh mi (say "no mayo") which are good.
