Good cafe - Edit
Nice little shop with at least three different vegan options (some hot and some cold). The breakfast sandwich I got was a little small for a meal (I got it for lunch) but had good flavor. Parking is a big downside if you aren't within walking distance.

Awesome independent coffee spot w/vegan items - Edit
This is a friendly, lovely coffee stand in the lobby of a downtown St. Paul building (and accessible via the Skyway). They have a labeled vegan pound cake and also a vegan breakfast sandwich (made with chorizo and vegan cheese).
