Plenty of Vegan Options - Edit
HaShachen Bistro a nice neighborhood restaurant with great options for vegans and several vegetarian ones as well. The place is close to the HaBima Theater and the Tel Aviv Cinemathèque. I especially recommend the vegan breakfast Shakshouka (sizzling pan of tofu cubes, spicy tomato and pepper sauce, and eggplant) which comes with bread, salad, techina, and coffee. Also the vegan tofu curry is a good (and very filling) dish.
