Only one option but totally worth it - Edit
They have vegan beef empanadas, which is the only vegan empanada available, but it is so delicious it is totally worth the trip for just that. They do have some salads they have told me can be vegan as well, but I did not try them.

One important thing to note is that they don’t always have the vegan empanadas ready. They told me to always call about 15 to 20 minutes before you plan to come and they will make sure to get them ready for you. Otherwise they said you might have to wait 20 minutes to get them.
The empanadas cost about four dollars each and two filled me up, but they recommend three per person.

The vegan beef empanada was so so so so good, one of the best empanadas I’ve ever had even before going vegan. Stop by! I got 3, which was a good portion. It does take 25 minutes to prepare, though.

Enjoyable empanada - Edit
The Vegan Beef empanada was enjoyable to eat. It has plant-based “beef” from Herbivorous Butcher mixed with onions, red peppers, potatoes, and scallions, and comes with a vegan dipping sauce. I ordered 3 which is a good size lunch portion. It is the only vegan menu item besides salad. The server said the cooks don’t like to veganize non-vegan empanada options on the menu.

It sounds like there's usually just one vegan option each day and it's not listed on the menu since it changes, however the staff was very knowledgeable. The non-vegan options are coated in an egg wash.

I got the vegan beef to cook at home and they were delicious, especially with the vegan sauce they included. They also knew which empanadas had dairy in them.
