juice bar with room to grow - Edit
The staff of De Mela will toss any fruits they have in their refrigerator into a juicer for you. The menu only lists a few possible fruit combinations and needs far more. It's not clear what fruits are actually on hand unless you ask.

I particularly like the apple-carrot with wheatgrass powder, but enjoy all three of the fruit combinations listed on the menu.
Some of the fruits they have on hand aren't familiar to me, and it's fun to have a chance to experience these new tastes and textures. Star fruit, sour cherry, and several fruits I can't identify are available here.
Be sure to ask for no ice if you just want juice, or they'll dump a half-cup of ice in your juice.
The smoothies aren't vegan. At my suggestion, the owner said he'd consider using soy or rice milk instead of the so-called non-dairy milk containing a milk derivative which they now use in the smoothies.

6/13 update:
The owner took to heart my suggestions about making his shop more vegan friendly and says he's now focusing more on providing pure fruit drinks and will soon provide a menu specifically for vegetarian customers. He now has soy milk on hand for those who want vegan smoothies.
In addition to 2 locations in or near Thao Dien/HCMC, a location is opening in Hanoi.
Pros: good variety of fresh fruit, smoothies can be made vegan, some staff speak good English
Cons: default is 1/2 cup juice, 1/2 cup ice, some staff don't speak much English
