Comida Taiwanesa
Small, completely vegetarian stand that serves Taiwanese street food snacks such as shaved ice, Taiwan style soy milk, stuffed cakes, and Taiwanese empanadas (a better description would be savory pancakes). The pancakes, soy milk and shaved ice (provided you only get fruit toppings and say no to the condensed milk) are vegan. Only one very small table. This is purely a grab-and-go type place. Directly across the street from La Esquina Asiatica. Open Mon-Sat 9:00am-6:00pm.

Savory pancakes. - Edit
Taiwanese street food run by an older Taiwanese family. Super cheap snacks to go.
About ~3Q for one of their savory pancakes. A bit hard to find if you're unfamiliar with Quetzaltenango (It's across the street from La Esquina Asiatica, you can find a map of Esquina on their facebook page)
They sell soy milk but it is the Asian/Taiwanese kind so don't expect something akin to Silk/whatever your preferred brand of soy milk is.
