Another coffee house in town which sells vegan pastries from Peaceful Provisions, on the weekends (find items like vegan doughnuts, pretzel croissants, cinnamon buns, sticky buns). Has hemp, soy, and almond milk for coffee and smoothies.

Vegan Baked Goods Available! CASH ONLY! - Edit
Coffee Labs is a little coffee house situated in the main drag of Tarrytown. They have several alternative milks available, they also carry vegan baked goods and donuts from peaceful provisions. If you don't see any vegan baked goods out ask the staff and they should be able to bring out options from the back.
The atmosphere was sort of lacking for me (worn/dirty looking furniture and lack of any sort of decor) and the cash only thing was extremely annoying since I normally don't have much cash on hand. It's also worth noting that there is only metered parking available. I would stop in if I was going to Salt Grass near by or exploring the area but I'm not sure that I would go out of my way to drink a coffee at Coffee Labs since it just didn't do much for me.
