Potato & Dried Fruit Casserole

    Peel and cube potatoes. Chop other ingredients.
    Heat olive oil in a frying pan, and sauté the onion and garlic.
    Add potatoes and dried fruit, and sauté for 10 minutes, stirring in the cumin powder, chili, and saffron.
    Transfer the mix into an oven dish.
    Pour the tomato sauce over the potatoes, and bake for 45 minutes at 350F / 175C.


    2 pounds (1 kg) potatoes
    mixed dried fruit (apricots, dates, figs prunes), chopped
    2 cup tomato sauce
    1 onion, chopped
    3 garlic cloves, chopped
    2 tablespoon olive oil
    1 teaspoon cumin powder
    1/2 teaspoon chili flakes
    1/2 teaspoon saffron
