Coconut Date Cake

    Combine coconut milk and dates in a saucepan. Simmer until dates are very soft. Place dates and coconut mixture in a blender; add oil, grated orange rind and juice and puree until smooth. Combine dry ingredients into a bowl. Pour liquid ingredients into dry and mix until well coated. The batter will be thick. Spoon batter into oiled baking dish. Bake at 350F degrees for 35-45 minutes, until firm and golden. Spread cake with coconut spread, or garnish with coconut flakes, chopped walnuts or almonds.     Liquid ingredients:
    2 cup coconut milk
    1 1/2 cup dates, pitted
    1/2 cup coconut oil
    1 orange, extract the juice and grate the rind  

    Dry ingredients:
    1 cup unbleached flour, sifted
    2 cup whole wheat pastry flour, sifted
    1 tablespoon non-aluminum baking powder
    1/2 cup coconut flakespinch sea salt

    Serving Size

    6-8 (10x14-inch cake)
