Great tofu poke bowls - Edit
We got 2 tofu bowls, and with all the options, they were really 2 different meals. The base can be rice or lettuce. Greens can be part of the toppings. Most toppings are free, but some specialty toppings had an upcharge. It was still overall reasonably priced for Disney even with an additional topping charge. They didn't have free water but told me which vendor I could get a free cup of water.

I ordered the "build your own poke bowl" with tofu and a number of toppings. The tofu was super tasty and the bowl was a decent size so it was filling as well.

Affordable, quick meal at Disney Springs - Edit
Cute little food kiosk in Disney Springs. You don't need theme park tickets to get in. I got the Tofu Power Bowl, which is already vegan. To make it gluten free, I had them put no tempura crunch, sriracha instead of wasabi ponzu sauce. It was tasty, but not super unique.

Tasty, fresh and extremely good value for money! - Edit
After nearly two weeks in the area, I was craving some fresh vegetables with my dinner and YeSake did not disappoint. I ordered the create-your-own poke bowl, with tofu as the protein option, all of the vegan topping options (veg was fresh and not fried!), and the Korean BBQ sauce (there were at least 5 sauces suitable for vegans at the time of writing). Make sure to add the tempura crunch on top which is also confirmed as vegan and one of the free toppings. Cost along with a premium topping of avocado came to $13.00USD excluding tax, so extremely good value for money. My only regret was not visiting earlier in my holiday so that I could go a second time! Staff were also extremely polite and helpful too.
