Traditional Soba with vegan soup stock

Perfect experience after visiting IZUMO TAISHA.

Great veggie soba!

Soup stock for hot soba and soba dip sauce/soup for cold soba or for Japnese food generally are usually fish based (typically bonito, mackerel, sardine flakes etc ). So I thought I can no longer go to eat Soba when I became vegan, and I have been carrying a small aoount of salt to make salted cold Soba. But here you can eat Soba with veggie based soup/dip sauce if you order cold Veggie Warigo Soba which is made from Konbu seaweed and Shiitake mushrooms and served with grated yam, grated raddish, chopped scallions and dried seaweed as toppings. Veggie Warigo Soba was the only Vegan soba menu other than white rice etc. But now I think back, as they have the vegan soup stock, probably easy for them to customise other menus too.

Veggie WARIGO SOBA is delicious.


 

SOBA for Vegetarians
(Veggie WARIGO SOBA: The ingredients for this dish are all vegetables and seaweed.No animal food is used.)
WARIGO SOBA(Buckwheat noodlesin a bowl)
WARIGO SOBA is a dish in which a buckwheat is divided into three and put in a dedicated bowl.
SOBA_YU (Soba hot water)
Soba hot water is hot water after boiling fresh soba.
Soba hot water is rich in the original flavor and health ingredients of buckwheat.
Soy sauce soup(Soba Dashi)
This soup is made with kelp and shiitake, and is soy sauce-flavored.
Japan's kelp is a food rich in umami ingredients and is a representative of natural foods.
It has been used for a long time as a source of DASHI soup.
Shiitake mushroom is used as a source of taste as deep as Western mushroom.
TOPPINGS(put it on the soba)
YAMAIMO
Grated yam potato.
DAIKON OROSHI
Grated radish.
SPICES (YAKUMI)
