Great vegan buffet - Edit
Very nice restaurant with a nice buffet. Most of the food is vegan, and clearly labelled. We had feijoada, pastel, salad and other stuff.

Great vegan lunch buffet - Edit
This cute restaurant has a nice lunch buffet that is mostly vegan (and gives a slight discount if you only choose vegan options or if you ride your bike there). The food was fresh and delicious. They also had several vegan options for dessert and vegan milk for coffee. A great lunch option for Fortaleza.
