Umma's Lunch Box
1301 5th Ave (at downtown), Seattle, Washington, USA, 98101
Serves meat, vegan options available. Cafeteria specializing in Korean food. Some of the buffet dishes seem vegan suitable - ask about use of fish and shrimp paste, etc. Has a small made-to-order menu. Sells reuseable containers that you could bring back for a discount. In 2014 changed its name from Le Chatel Bakery and Cafe. Open Mon-Fri 8:00am-2:00pm.

Pretty Good - Edit
The folks here are so nice! It's a small family-run business. The man who is usually behind the counter always remembers me and tells me what's vegan. Talk to him. The woman doesn't seem to quite get it. A few of the dishes change daily, but you can always get bibimbap or japchae. It's surprisingly good and holds up to the steam table very well. The downside is that it's in this crappy little cafeteria area in Rainier Tower.
Pros: Korean Food
Cons: Location
