Authentic delicious vegan options

This is some of the best Mexican food I’ve had in the US. Was not expecting this driving through Cheyenne! The mushroom salsa tastes like food I’ve had in Mexico, so fresh and unbelievably flavorful! Wow. Most Mexican restaurants in the US are so disappointing as a vegan—a pile of flavorless beans and rice. The veggie enchiladas here were bursting with flavor and freshness. Really, wow. And the restaurant is so clean, and the service was amazing.

Vegan friendly Mexican in Cheyenne!

One of the few Mexican restaurants where I can get vegetarian options. I now get those same items vegan by telling the server to remove the dairy (cheese and sour cream), and picking sauces which contain no dairy. This on my favorites list in Cheyenne. While the refried beans are cooked with lard, the black beans are vegetarian, as is the rice. It's rare to find a Mexican restaurant that does not have chicken stock in their rice. This is one of the few. I've eaten here for about since this location opened, and the other location since it opened about 3 years ago. While they serve breakfast, they don't open until 11 AM.

The dinners I've had here are enjoyable. We really like their mushroom salsa. Yep, mushroom salsa. Their regular salsa is very good. If you want more intense ask for habanero sauce on the side. I appreciate their chip aren't too salty. There barely is salt on them. Too often tortilla chips are way over salted.

The are also one of the few place which make Original Margaritas correctly: lime juice, Contreau, Triple Sec, and Tequila, nothing else other than ice. They have other variation for those who like them, but finding a correctly made Original Margarita is about as rare as finding Mexican Rice without chicken stock.
