Good sushi and a lot of vegan options - Edit
There are in total I think 9 vegan options like corn, cucumber, yuba!, fancy eggplant, radish, tofu pocket, fermented soybeans (I hated it) and my favourite: plum with perilla. For dessert I ordered the yuba with matcha, delicious! There were only two options driving around, so I ordered multiple times at the sushi maker, that worked perfectly.

Cheap and satisfying - Edit
I had 8 plates total (including 1 expensive red plate) and the total was still under 1500 jpy. Here are some detailed instructions below for any first timers who may be hesitating... Some waiters speak English too.
Read moreHow to find the place: Just exit the station completely (no need to tap in your IC), preferably through the Hachijo West exit or follow signs for the bus. Go down the stairs to your left or make sure you are on the ground floor. Keep walking left and enter the station when you see the shinkansen entrance. Once you enter the station, in front of you should be the station gates, go right until you see an alley of Japanese style restaurants. It should be one of the first ones to the left side. You can identify them by the sushi menus on the outside and even see the conveyor belt sushi through the door.
How it works: You get seated and given a menu which conveniently lists all the 'vegetable' options. You can keep an eye out on conveyor belt to see if any 'vegetable' ones you like pass by you, which you can grab. The belt has signs which clearly state what each one is, which is so helpful. Or you can flag down a waiter and point on the menu to make a specific order. The chef will then make it on the spot for you. While you wait, help yourself to unlimited green tea using the hot tap in front of you. All the utensils are in front of you, grab what you need to use. They have 3 sauces, but I only trusted the soy sauce and wasabi (didn't know if the others had fish or anything mixed into it). Once you're done, tell the waiter you want to pay. They will scan the plates, producing your total. You pay at the counter, cash or any card of your choice.
Inari sushi is my favourite. I would have loved to have the corn mayo one, which I have tried at a different place, but this was not vegetarian according to the waiter/menu. I feel like they think vegetarian = vegan.

They had a nice amount of vegan options, and all tasted great! The amount of options could always be better, but definitely check this place out if you're in the area. Additional bonus: all of the vegan options are in the lowest price category, so you won't be breaking the bank here.

There was a soy bean paste based sushi that I really enjoyed too, sadly forgot the name.
All vegan sushi is very cheap so you can get pretty full at a very low price

There are about 7 types of vegan sushis you can get, and almost all of them are the cheapest plates, so it was pretty affordable. I liked the grilled corn and the inari ones the best!

I rate this sushi bar, it’s one of the few that I’ve seen in Japan that has 5 or 6 sushi options for vegetarians (less for vegans). The Japanese green tea is also refreshing. It’s a convenient stop for a quick (and tasty) bite and has been busy with both locals and travellers whenever I’ve called in. Sadly, my favourite avocado sushi is no longer on the menu.

I loved how my wife and I were able to have a meal together. She loves sushi and I am vegan. The chefs will also make anything for you if you do jlnot see it on the conveyer belt. Also a plus is that the vegan options includes Inari sushi and fermented bean rolls clearly labeled as vegetarian

A fair few options, chefs will make ones that are on the menu if they’re not out and you ask. The free tea is nice, 20 plates and 2 drinks cost 5000yen including tax. The rice is well seasoned. Maybe a nice spot for lunch but not the best either. If you’re looking for something nice, fast and good for vege and non vege it’s a good shout but I wouldn’t run to the place

There were a few vegan options, clearly labelled vege on the menu and on the conveyer. It was a cool experience however the sushi was quite tasteless and seeing the fish and meat sushi go past was not great and smelt very strongly of fish.

Queued for about 20 minutes just before peak dinner time (7pm). By the time we got out at 7:30pm the line was about 20 people long. The options are limited and honestly I don’t think it was worth it to witness people eating SUCH huge quantities of animals. Beware they sell ‘raw horse meat’. The hot water taps on each bench is a nice touch and tea is complimentary. We ate 8 plates and it was only 160 per plate (with tax). Standout was the inari but isn’t it always.

There's not a lot of options for vegetarians, but the different sauces offered let you try many combinaisons. The vegetarian sushis are cheap, 160 yen each. Atmosphere is great but expect some waiting time before entering (there are seats available).
