Only one sushi could be made vegan

The place seemed very nice and I asked for vegan options. They only could make one single vegan sushi. Even though I asked for something more as I'm a very good and uncomplicated eater. She checked with the chef, it was the only thing, so I ordered twice the same.
Common, how can you not just put some veggies into that sushi? Or some noodles or rice? :)
The restaurant was not full by the way. Service was as friendly as it has to be.
