a noteworthy alternative to all-vegetarian Kitchen & Coffee - Edit
As a frequent visitor to Beacon, I am pleased to see that “VisionMixer” took the initiative to list Sukhothai here on Hippie Cow. Thank you, VM!
Before all-vegetarian Kitchen & Coffee opened in Beacon, and before all-vegetarian Krishna Kitchen opened and closed in Newburgh, before all-vegan Vegetalian opened and closed in Beacon, I had often eaten at Sukhothai.
On a Saturday afternoon, K&C is too darn overcrowded and noisy with malingerers nursing their cups of coffee, so two days ago the members of my lunch party gathered at Sukhothai, where the dining area was quiet and spacious, and the staff accommodating and welcoming.
Sukhothai is unique among Thai restaurants in that the waitstaff here speak fluent Vegan. They are well aware that anything deep-fried soaks in the same vat of sizzling oil as was meat, and that fish sauce is routine in all Thai dishes. Of the 4 dishes here listed as Vegetarian, 3 are inherently Vegan, but the Vegetable Pad Thai is not, as it includes egg as an ingredient. For the 3 all-Vegan dishes, instead of fish sauce, Sukhothai serves a "vegetarian stir-fry sauce." You could substitute tofu in many meat dishes, too, but you’ll need to specify your vegan preferences (which can be check-marked on the online menu). I prefer the relative assurance of the specifically Vegetarian section of the menu.
Among the 3 wholesome all-Vegan main dishes, the Basil Fried Rice is served atop fried rice, while for the Stir-Fried Mixed Vegetables and the Tofu Grapow the rice is served in a separate dish, so with these latter two dishes you get a lot more vegetables. Notice on the online menu that you can specify what veggies to omit. Not mentioned online, for a modest $1 surcharge, you can order Brown Rice instead of the standard Jasmine white rice. While the nutritional advantage of Brown over White Rice is slight, I consider the option of Brown Rice as a gold standard for nutritional awareness, so am thankful for it.
As long as am comparing nutritional standards, among their vegan dishes Sukhothai either matches or surpasses Kitchen & Coffee regarding wholesomeness of its foods. You might consider Sukhothai’s only 3 vegan entrées as dismal, but K& C is heavy on eggs and dairy, so at K&C vegans are left with as few choices as at Sukhothai.
Also compared to K&C, parking is more readily found near its site on the less congested far end of Main St, two short blocks from a municipal parking lot.

Menu are listed to highlight vegetarian or gluten-free options. Most dishes can be made vegan. The food was extremely fresh and tasty. Be clear to tell server that you are vegan. For example, some fried items like Golden Tofu or Spring Rolls are not good due to ther non-veg items cooked in the same fryer. The server was very attentive to noting cross-contamination concerns for the chef. Made many good suggestions.
