"Vegetarian Tiger" operates several branches in Beijing - this one is near Tsinghua University South Gate, not far from Wudokou station. Large space with plenty of seating. All-you-can-eat buffet including drinks, pastries, Chinese style soups and dishes with mushrooms, tofu, mock meats, vegetables, and noodles. Everything is vegan except for the pastries. Reported closed July 2023.

Inexpensive and really good buffet - Edit
If you're near Tsinghua University, I recommend this place. Lots of really good choices in the buffet and dumpling bar. Also very reasonably priced. Drinks are included. Their Enzyme Drink is also really wonderful (sort of like kambucha).
Read moreIt can be pretty crowded at lunch time, but there is plenty of seating, and I've never had a problem getting a seat, even for groups.
