Common stop for lunch on tours to Mt Cook and Lake Tekapo.
When I went, they had a couple of vegan options, including a few pies, muffins etc. I believe I even spotted a vegan ice cream in the fridge.
The lentil pie I had was nice enough.
Food/cold drinks are self serve with trays that you take and pay at the counter, but you can also order hot drinks/other meals.
Two different vegan pies were available in the warmer when we visited, one mixed veg and the other mince and cheese. Both weren’t bad! I really liked the vegan mince and cheese one.
We didn’t ask about other options for meals but it didn’t look like there was much else, unless they were willing to make lots of subs.
The Hermitage Hotel seems to house at least 4 food and drink venues on various floors including this one ( Chamois Bar & Grill, Snowline Bar, and Alpine Restaurant), which took us a while to realise. This was the only place we tried due to our schedule and budget. Although apparently you can get a vegan platter at the Snowline Bar!
2 stars because they really should be more vegan friendly for a place that size.

Pros: Decent vegan pies, Nice view of Aoraki
Cons: Limited vegan options, Chaotic and busy with lots of tourists
