No longer fully vegetarian - Edit
Unfortunately no longer fully veg restaurant. The entire menu is different and there are few vegan options😒the restaurant is beautiful and service incredible! The food was still ehh.. it’s just a strange menu. Not bad but not OMG. Wish they’d add some more traditional dishes and of course wish they stayed vegan.😒

Disappointing - Edit
This used to be my favorite place to visit when I was in Las Vegas. As a couple others have mentioned, it's no longer vegetarian, but serves all types of meat and seafood along with a much smaller selection of plant-based options.
Read moreWe learned this as we were seated by the hostess and tried to keep an open mind. The decor of the restaurant is truly beautiful, especially the glass flowers hanging from the ceiling. It is a very peaceful and romantic setting for a meal - that part hasn't changed. However, all of our favorite dishes from the past had been removed. We ordered the gyoza appetizer and the vegan scallops, but were not impressed with either one. The gyoza was uninspired, like something one would buy frozen from the grocery store. These two dishes plus a bottle of sparkling water was $59.

No longer vegetarian - Edit
Went there last night (May 26, 2024) and learned that as of May 1, this restaurant is no longer vegetarian. Serves meat and fish, and these dishes actually predominate.

No Longer Plant Based - Edit
This is no longer a plant based establishment. They recently transitioned to a more traditional meat friendly menu with vegan few plant based options. When my wife and I visited for our anniversary, we were surprised to find out about the change from the host. The limited options available to us were just "ok" and seemed a little overpriced. In addition, our primary server seemed very disengaged after finding out we were vegan. He appeared to not want to discuss the recent menu changes at all.

Cons: Menu changed to a traditional meat friendly one, Very few vegan and vegetarian options, Very overpriced

LOVE! - Edit
Saffron is a total hidden gem in vegas. It looks closed from the outside but once you step inside it is a total dream. The space is beautiful with crushed velvet booths, high ceilings, and beautiful water element. Staff is super sweet and efficient and the food is DIVINE. Do not sleep on the CORN CHOWDER. Love love love everything here and will always come back to this zen space to escape the chaos of vegas.

100% vegan menu - Edit
We went for our post wedding dinner & everything was great. All dishes are vegan & delicious. GF options were not plentiful but well marked. Yes, it's pricy but worth it for a celebration. Wait staff very attentive & accommodating. Favorite dishes were eggplant & curry!

Great food but billing practices convey lack of trust in customers - Edit
Everything we ate was delicious: Floating Gyoza, Golden Beet Brunoise, Spicy Street Noodles, Claypot Rice. Portions were moderate in size. The location and exterior have mediocre aesthetics for a fine dining restaurant. There are no windows inside. There is an automatic 20% gratuity regardless of party size. This was not disclosed to us until we finished dining and our server brought us our check. He told us it was 18%, but it was actually 20% when I checked the math on the bill. The website confirms it is 20% at the bottom of the menu page. As soon as we got up to leave, another employee immediately went to our table and examined our paid bill. This was the same person whose main function was to walk continuosly back and forth past the tables, keeping an eye on the progress of everyone's meals.

A rare find! Elegant atmosphere and very delicious food. Tried a four course menu they offered during restaurant week, and enjoyed it fully. I give it my highest recommendation and will definitely be back.

One of the best all vegan restaurants in Las Vegas! - Edit
Despite their name, this place is 100% vegan and their food is fantastic! It may look closed from the outside but the inside is beautiful and the food is delicious. Unique and creative Asian food!

Good, not great - Edit
We ordered a lot to get a taste of everything. My review is actually 3.5 stars.
Read moreAppetizers: Pureed Spicy Street Corn(great), Bang Bang Cauliflower (great), Floating Gyoza (good), Mushroom Bao Buns (great), and Squash Blossoms (good).
Mains: Bo Chay Cay Noodles (good), Claypot Rice (bland), Spicy Eggplant (too spicy), Vegan Foie Gras (overpriced)
Overall, the appetizers were more interesting and I would go back to try others. The mains were definitely not as good and won't go back for those.

Overpriced, okay food - Edit
The atmosphere is beautiful. The food is so overpriced. I ordered the vegan foie gras that only has three slices of king oyster mushrooms, not even a whole one, and that’s $32. The flavor was okay and not impressive. I tried many upscale vegan places and the efforts and creativity that go into their dishes doesn’t not match the price.
Read moreThe restaurant is poorly managed. The night we went, there was only three workers for the whole restaurant that have to attend to front desk, bartending, and serve the tables. We waited 20 minutes just to get acknowledged at the front desk…and another 20 minutes to get seated.
The final but most disappointed aspect about this restaurant is the owner is not vegan or even vegetarian…he claims to use his restaurant to encourage more people to eat plants. How? With his overpriced and mediocre food? With his zero ethics? This whole restaurant seems to capitalize off veganism and only care about money not the ethics of veganism.

Love the ambiance. Was not impressed with the food.

Worth the taxi ride off the Strip - Edit
Small and large plates combined with great service and cocktails. Really enjoyed the food here and the servers were great and really helpful. Thoroughly recommend any vegan to make the journey off Strip to get something tasty and definitely vegan! Could do with a couple more options on the menu.

Beautiful space, fantastic food - Edit
We had dinner at Saffron. The exterior looks a bit suspect, but the interior ambiance is really nice. We ordered Tom Ka Soup. It’s different than what you might expect but is really delicious. We also order gyoza , which again were a bit unexpected and really tasty. For entrees, we order red curry and the spicy eggplant and tofu. The curry was beautifully presented and both dishes tasted really good. We cleaned our plates. I’d hoped to have room for dessert but that didn’t turn out to be the case. Maybe next time. It’s definitely an upscale, more costly meal but worth it in my mind.

a very good experience in a beautiful space - Edit
we were visiting las vegas with an omni friend and this menu/experience tempted them.
Read morethe outside of the building had us a little worried we were in the wrong place (it's in a strip mall), but by some magic, the interior is much larger and much more elevated than the exterior. it's a beautiful space, and if you're considering this place based on the pictures of the interior, you will not be disappointed.
the cocktails (lotus blossom martini, lemongrass margarita and whiskey sour) were exceptional and definitely lived up to/renewed our excitement for the level of craft we were about to experience.
starters and salads also delivered on the omg, in particular the black garlic dumplings, pumpkin coconut soup, the grilled watermelon salad and the charred cabbage. we traded dishes and generally made a scene of ourselves with all of the utensils ending up in a single pile because it was all so good that it truly needed to be shared, with each having moments of novel or surprising flavors in perfect balance with the rest of the dish. our omni friend was in heaven.
entrees (claypot rice, spicy eggplant and fried tofu and one other) were very good, just not quite as memorable or high on the experiential level as the starters and salads which were all very beautifully presented and full of surprises.
the cheesecake was the only disappointment. it seemed like it might have been a rice-based recipe in keeping more with the restaurant's overall menu but didn't have the savory richness of a cashew or sour notes of vegan cream cheese based cheesecake we were hoping for and seemed very sweet. coffee would have been a nice contrast for the sweetness and a nice boost for the rest of the evening to come, but they don't serve coffee.
our server was very friendly and helpful, but the service was not at the level of, say, vedge in philly or other fine dining establishments. possibly this is due to our visit being in the weeks after a pandemic and all of the staffing disruptions that has brought about and it will smooth out over time.
one last note in an overlong review; the choice of muzak (instrumental jazz versions of pop music) was at times distracting, whether because it was jazzy (not my jam) not in line with the asian theme of the restaurant, or just generally silly as muzak often is. it did provide one good moment as our entire table was laughing and singing along with an instrumental version of careless whisper. we might be horrible restaurant guests.
Pros: superb cocktails & starters, beautiful space
Cons: muzak, cheesecake

Upscale veggie dining - Edit
Let me start off by saying this place is fancy AF...definitely not a jeans and t-shirt kind of establishment! The food is 100% vegetarian, although not all items are vegan (but I'd guess at least 75% of it is). We had the fried tempura mushrooms, the Bo Chay Cay noodles, and the Claypot Rice and it was absolutely delicious and beautifully presented! The atmosphere is also very elegant, with a fountain in the center and a beautiful sculpture hanging from the ceiling. While it's a little expensive for us to enjoy regularly, this is an absolutely amazing place for a nice date or special occasion. It's not very common to find a veg*n place this elegant!
