KotoBuki has been around since the 90's. I've been coming here since I was a carnivorous child and this was the first place I ever tried Sushi. This place is 10/10. For a sushi place catering mostly to meat eaters, this place is a phenomenal vegan goldmine.
The Chef is an expert in Vegan options and one you can trust if your server doesn't know if something is vegan friendly: spoiler alert the Miso soup here is not vegan, but the veggie ramen is!
I LOVE Kotobuki’s veggie sushi! They always use the freshest veggies. They vegetable gyoza is also amazing, hot and crispy. My fiancé gets the veggie ramen with no egg. The service isn’t great, but I make an exception because the food is so amazing.

The sushi chefs are willing to add tofu to any sushi roll which isn't the case at most other sushi restaurants in the area. The tempura is vegan as is the miso soup. It was 1997. I was in my final year of college when a fellow student asked if I wanted to join her for sushi. Well, I had never experienced sushi, so I told her she would need to be my guide.
I had been to our local Japanese steak house a few times, but at this point sushi still meant "raw fish" to me. My friend was an excellent teacher, and I fell in love with the atmosphere, the kind waitress, the delicate stylings, the Asian music, and of course the amazing food.
I wish my friend had warned me more about the power of wasabi....
Now that I'm vegan, Koto Buki has been one of my regular stops. They have many vegan items on the menu, and the staff listens well to requests, questions, and concerns.
