Not a good first impression - Edit
First of all, the dishes aren't properly labelled so you'll need to ask the staff or check their Spanish website to know if they're vegan or vegetarian (the menu in the English version of the web doesn't label the dishes). Then it turned out the chickpea stew was not available the day we had lunch but we knew after ordering it (they offered us other dish instead and we didn't have to pay the difference, which seems highly professional to me). Also the Blue bravas were a bit undercooked. Luckily enough, the grilled seitan and the tempeh stew were amazing. To summarize I'd say they looked a bit lost, probably bc they've just started running the business.

Top level experience - Edit
The food is awesome, very elaborated and tasty at all. It was such a surprise to find this place in this new fancy food court, and do not be mistaken, Huma's proposal is very fancy as well. I had three plates (tempeh in plum glaze, seitan stew and bagel with heura) and the quality of all of them overstood my expectations. Definitively recommended!
