Vegan lunch - Edit
Very tasty decent set meal for lunch, $6000! Can't go wrong
Ask if it can be made vegan, in most cases probably can.

I've lived in Manizales for nearly a year now, and I only just found Govinda's - despite it's central location, there is no sign and it's upstairs.. look for the man in the Krishna robes at the bottom of the stairs.
Food is good, and a great deal - 6000 for juice, soup, main and dessert.
Pros: Cheap
Cons: Needs a sign!

great vegan food - Edit
All veg restaurant and knows what vegano means. Able to alter their regular lunches to make vegan. Super cute inside, bright colors, very cheery. Friendly staff. Food is super cheap but healthy and simple. Exactly what I needed after a couple rough meals of eating only patacón and hogao. One of the best meals I had in non-touristy Colombia.

Good food in the historic part of town - Edit
As of March 2010 the set meal of the day costs 5.000 pesos. The food overall was good. This may sound strange, but even though this is a vegetarian restaurant, there weren't enough veggies on the plate. There were protein and starch items, but I like to have a variety of other non-starchy veggies such as carrots, broccoli, celery, etc. I only ate there one time, so it may be better on your visit. The set meal is a good deal, and comes with a juice drink or an infusion of some sort. They are open for lunch only, and I would arrive no later than 1:00 p.m. It's right in the middle of the historic part of town, so easy access for the typical tourist.
