Shaking out his roots, Sergio Garcia builds layers of from-scratch flavor into his tacos, at least three of which are usually innovative vegan offerings (and occasionally 100% are vegan for vegan events). With careful attention to texture—fillings are often finished with the crisp bits of pickled onions, a crunchy sprinkle, and a drizzle of beet pink hot sauce—he fills made to order tortillas with creativity like chorizo-spiced lentils and birria stewed enoki mushrooms. The subtlety of flavors demands slowing down and savoring each bite, less one misses the efforts placed inside each fold.
