A very welcoming staff explained to me that the concept of Copains is to move away from traditional French baking and offer entirely wheat free products (bread, pastries, sandwiches). This place is heaven for coeliacs, but I don't have a wheat intolerance and gluten is essential for a healthy diet, nevertheless I decided to try a few things. The fillings of the sandwich that I had were yummy but the bread and the rest of the pastries didn't taste great, pretty much like anything I ever tried that is gluten free. Also quite expensive 🥹

Outstanding gluten-free bakery with vegan options - Edit
Copains is a gluten-free bakery chain with several addresses in Paris. It replicates all classic French pastries and offers many vegan options, including excellent lemon, strawberry or blueberry tarts. Their eclairs are lactose-free. Highly recommended.

The location of this Copains branch is great because there are few places around the Marais where you can have a small treat during the afternoon while sipping a cup of coffee.

This branch has a small eat-in space, so if you're lucky you may even get a seat.
