Vegetarian Options - Edit
My husband and I just went to this Chopstix. There was a small vegetarian menu and 3 soups were marked vegan.
Read moreWe asked if the vegetarian dishes could be made vegan and the manager said, "No, all of the vegetarian dishes have chicken powder in the sauces.", But that we could have one of the 3 vegan soups.
She walked away and when she was gone other people were trying to help us, so we asked them to confirm, but they didn't know anything about it.
So when the lady came back I asked her if I understood right that all of the vegetarian dishes have chicken powder. She went to the kitchen to make sure. When she came back she said yes, the vegetarian dishes do have chicken powder in the sauces, but that we could have the vegan soups.
She kept assuring me that the soups were something I could eat as a vegan.
I told her that I understand, but my concern is that a vegetarian will come in and order from the vegetarian menu and get something with chicken powder, because vegetarians do not eat chicken.
She kept saying it's ok cause she tells them.
It was clear that I wasn't going to be able to make her understand, so we left.
I don't know if all of their restaurants have the same ingredients, but you might want to ask if there is chicken powder in the sauces of their vegetarian dishes if you go to another location.
At this point I wouldn't trust that the soups are actually vegan either if they didn't research what vegetarians eat before making their vegetarian menu.

Yummy Pho - Edit
Enjoyed the veg pho! I didn’t even miss the pho ga I used to ONLY eat. We messed up and ordered the regular spring rolls (I’m pescatarian) instead of the vegetarian ones which had a SPAM-like ham in it as well as shrimp. After digging that out, they were as good as any other I’ve had. At the other location in Seaside, I ordered another veg soup dish and ended up barely eating any as it had no flavor despite dousing it in Sirarcha and Hoysin sauce.

Our worst meal in Monterey - Edit
There are almost no options that are strictly vegetarian (e.g., no fish sauce). The food we could eat was terrible.

Pho-tastic! - Edit
Excited to find Chopstix - they have a separate vegetarian menu list of 8 items, 3 of which are labelled vegan.
Read moreHave wanted to find a place with vegan pho and I'm glad I discovered this place. I thought the pho broth was incredibly flavoured and definitely satisfied my pho craving. The flavours in the Organic tofu with lemongrass and Tofu fried rice were also amazing. The vegetarian glass noodles were a little underwhelming and I wouldn't bother getting them again. I look forward to visiting again. They also have Bánh mì (sandwich) on the menu with tofu and veggie ham, as well as some snacks, appetisers and specialty plates that you could request vegan. Seems a very popular spot with the locals. Also offers a variety of boba drinks.
Pros: Cheap eats!, Good flavour., Very friendly staff.
