Out of this World Burgers and Lemonade - Edit
While the outside of this burger stand might not look like much, this is a book that REALLY shouldn’t be judged by its cover. The impossible burger was grilled perfectly with tons of topping options including the New Mexico staple, green chilies. The lemonades also offered a plethora of choices; the three we had were a good mix of tart and sweet with neither flavor being too overpowering. Not to mention the staff was super friendly and understanding of our order! Would absolutely recommend and would totally stop by again!

Impossible burger with fries. Was really good. Vegan Fries! Owner is nice and knows what veganism is. It was kinda pricey at $19 for the burger and fries.

The owner was incredibly helpful and kind. She listed all of the ingredients of the item I picked to ensure she didn't add anything I didn't want. She also cooked my Impossible burger in a pan rather than on their grill. She asked if I wanted anything added and listed some items. I picked mushrooms and she was far from stingy with them! Excellent experience!

Quick and Easy to order vegan. A tad expensive. Impossible burgers are $3 more than their cow burgers.

Tumbleweeds aka 'Weeds': They would be great as a topping but not so much as a side. They are essentially Frenchies onions like you can buy at the store and is traditionally put on top of green bean casserole.
Fries: they automatically come with their house seasoning. It wasn't bad, just a bit salty.
Berry Hibiscus drink: okay, needed a bit of flavor. I would have liked more sweetener.
The lady who took our order went through each type of topping and asked clear questions so there was no confusion. We really appreciated that. She made it easy to order vegan.

Super cute little outdoor patio spot. The food is delicious and the workers are super cool! Gave us a sample of what they call "weeds" yum! Love this place will totally be back

Fantastic food and a fantastic owner - Edit
We spent a couple of days in Roswell, NM (mostly to check out the UFO museum, which is pretty cool to visit if you're ever in the area) and there were very few vegan options advertised on Happy Cow. Not shocking- since we don't have very high expectations from small towns. However, there was this tiny little burger joint with a walk-up window and outside seating, Chef Toddzilla's Gourmet Burgers, that was serving the Impossible Burger. Since we're big fans of the Impossible Burger and haven't had it since this past summer at White Castle, we headed over there to stuff our faces. We got our burgers and Todd himself came out to chat with us and offer us some free crispy onions. We started chatting and told him that we were vegan and thanked him for offering a vegan burger. We inquired about how well it was selling, which he said it was selling really well. Many people who try it have no idea that they're not eating a beef burger. He started talking about how he's been supplementing his meals with Soylent and had lost a considerable amount of weight using the product and offered to give us a bag for free so we could try it out. He said that even though he cooks burgers all day, he feels so much better not eating meat and was thankful that the Impossible Burger existed. He was the nicest man and we were so happy to have met him. However you feel about the Impossible Burger, the bottom line is that it's saving animals and meat eaters are actually enjoying it because they can't tell the difference between it and the beef burger.
