No vegan burger, but great brunch! - Edit
We went on a Sunday, so they had a brunch menu, but I asked if we could still order their vegan burger. Waitstaff told me that their house-made patty actually has egg as a binder and isn’t vegan. They still had two vegan options, avocado toast and a vegan scramble, which is what I ordered. It was really flavorful, with tofu, impossible burger chorizo, a green chili sauce, and tortilla chips. I also added potatoes and avocado, which I recommend. If they have chorizo they made from impossible burgers, then I’m not sure why they don’t also serve them as burgers...but I was very happy with the scramble. We also enjoyed our drinks, and sat outside right by the riverwalk, so it was a great place to hang and catch up!

Got the "Asian lettuce wraps". Was served with all the ingredients for these separately - with some very paltry looking lettuce leaves that were not fit for the job- it was just really poorly thought out and impractical as a dish if decent tasting. So yeah, don't order that if you expect a fully assembled dish- honestly not worth for $16 my poor bf lol. Drinks were good tho.

Fantastic Vegan Slopper! - Edit
my partner and i visit pueblo once or twice a year when my hockey team and the team he coaches play here. he usually goes to gray’s coors tavern (with no vegan options) for a “slopper,” essentially an open-face smashburger smothered in green chile with onions on top. they closed early due to being slow, so we checked out brues alehouse tavern. they have a vegan slopper AND a vegan breakfast slopper option! the downside: they don’t include hours on their sunday menu. we thought we were ordering a vegan breakfast slopper for me and a regular breakfast slopper for him, but they charged us an extra $14 for two eggs for him and the just egg on mine, with no mention of it from the server. the portions were incredibly generous (i couldn’t even eat half!), and it was so delicious! great beers, too! service was wonderful, except for the surprise on the fill and the server snatching the check from us at the end. bonus: they use vegan bloody mary mix!

Vegan option was phenomenal - Edit
I went for lunch and ordered the vegan “chorizo” bowl. It was loaded with spicy potatoes, black beans, pico de gallo, and avocados and served with three small tortillas so you could make your own street tacos. As an appetizer, I had the white bean hummus with cucumbers. Everything was amazing. The designated Vegan options were limited, but there were a lot of options that happened to be vegan or could easily be altered. I will definitely go back.
Read moreEditing my review because I went back and they had added a vegan portobello mushroom burger. It was good but very greasy. When I order it again I’ll ask if they ease up of the oil when grilling it.
Editing again: this used to be my favorite restaurant in Pueblo for quality vegan options but sadly they seem to not want vegans as patrons. The vegan options have been reduced to overpriced avocado tacos featuring tortillas that fall apart and aren’t very good and French fries. Sadly, I have no plans to eat here ever again.

Limited vegan options, but both were very good. They have avocado tacos, fried (too bad) avocado on a slaw. It really needed some salsa. The power up salad was tasty and great fruit in the salad. Hubby enjoyed his beer. They had a seltzer, but it was pretty tasteless so passed in a drink. Nice location, traveling in a class C motor home. Decent parking

Brues is one of my favorites, they have some good Vegan options and an excellent venue with great service! They offer good Vegan options, the Avocado Tacos are the best! I love the Power up Salad and occasionally they have a vegan soup of the day.

Vegan Chorizo Bowl!! - Edit
This entree is fantastic! I would give it 5 stars if the app would let me. Although not a fully vegan restaurant, they mix up vegan offerings so that repeat customers don’t always have to get the same thing. This Bowl is their best yet!

The hummus is hands down delicious and the white bean veggie burger is unlike any other veggie burger I’ve ever tasted. It’s crispy on the outside and just delicious especially with the fries that come with it! Can’t wait to go back!
