Good vegetarian options, limited vegan

I try to eat whole food, plant based. I was excited to try Brixton's! I got a "Veggie" and asked the guy to hold the white sauce and cheese. (He wasn't sure what was in the sauce, and I assume it's dairy.) I also added onions and cilantro, and was super glad I did. The additions carried the flavor for me.

It would be so easy to develop a vegan bean option (white, black, or charro) and a mushroom gravy. If I could have designed any potato here, it would have been streamed collards, veggies, white bean with mushroom sauce, with onions on top. Until then, I'll eat this and dream.

Pros: Naturally gluten free , Naturally whole food base, Fresh ingredients

Cons: Limited vegan options, Staff didn't know ingredients

Vegan? Very Dry Potato

I like tomatoes (at the very least) on my potato just so they can be juicy (not dry). At this place, you have a chance of getting edamame beans or broccoli (because they ae often out of one, the other, or both). You have no chance of getting tomatoes. This makes your potato so very dry and it is not a delicious thing. Vegan tastes awful dry!

Pros: edamame or broccoli on a potato

Cons: expensive $8 for a potato with edamame or broccoli, no tomatoes on your potato!

Delicous

They don't have too many vegan options here, BUT they have a veggie option that's absolutely delicious. It comes with mixed veggies and edamame on a baked potato, and for the sauce they have a coconut curry that is vegan. I get it every time I go and it's always way good. They even add fresh chopped basil which really adds a nice flavor to it.
