A Gem in Castle Rock

This is the 5th time we have visited Amaro's Table since December. An extended power outage last December sent us in search of a warm meal in a building with heat.
It was a delightful surprise to find a top notch restaurant in our little Castle Rock community! Their food in general is creative, fresh and delicious.
My favorites have been the House Quinoa Burger minus the cheese. So flavorful and delicious. I’ve also really enjoyed the Roasted Beet Salad, hold the cheese. Turns out the quinoa burger patty is an excellent protein addition to the salad. So yummy!
The staff is super friendly and vegan knowledgeable, they happily modify dishes to meet your needs. An example is their very popular Fried Brussels Sprouts, cooked in a shared fryer, are made vegan friendly by sautéing them. Hot, fresh and amazing!
An extensive drink menu rounds out the experience which includes zero-proof drinks. Will definitely try one next time and include in another review.
