Eating Vegetarian on the Cotai Strip can be tough. - Edit
Finding vegetarian food on the Cotai Strip can be difficult, very difficult. Three Monkeys is a fairly hokey restaurant inside the hokey Venetian Casino. But, they do have a vegetarian section on their menu, giving your whole group several options. They are a Singapore restaurant that advertises they are halal, so I assume they take special diets very seriously. Dishes I remember from the vegetarian section include aglio olio pasta, curry, fried rice, quesadillas, pizza and nachos. The food was a little better than expected, they had nice added touches that added a little oomph to the food. It was what you would expect to pay for a meal at TGIFridays or Ruby Tuesdays in the US. I wouldn't make a special trip out to 3 Monkeys that is for sure. The only other vegetarian dishes I can even remember out on the strip was a veggie burger in the food court at the Venetian and an avocado sandwich (called a vegetable burger) at the food court in the City of Dreams.
