Zucchini and String Bean Curry

Zucchini and String Bean Curry


1 tablespoon oil
8 ounce fresh string beans
8 ounce fresh zucchini
1 large onion, chopped
1/4 teaspoon dark mustard seeds
1 tablespoon cumin
1/2 teaspoon turmeric
1 tablespoon coriander
1/2 teaspoon garlic powder
1/4 teaspoon chili powder
Salt to taste


Wash string beans, removed the stems, and break into 2-inch long pieces. Wash zucchini, remove the ends, and cut into small rounds. Over medium heat saute onion in oil until onion is soft. Add mustard seeds. When seeds start jumping, add cumin, turmeric, and coriander. Continue to saute the onion until it is covered with spices. Add string beans. Stir and cover for 3 minutes. Then add zucchini, and cook for 1 minute. Add garlic powder, chili powder, and salt. Cook for 7-10 minutes.
