South African Patat Sweet Potato Slice

    Boil the sweet potatoes until soft, and remove the skin.
    Heat the oven to 180 C degrees.
    Mash the boiled sweet potatoes, and mix with soy milk until smooth.
    Blend banana, coconut oil, and vanilla into the sweet potato mixture.
    In a separate bowl, mix the agar agar with 1/2 cup boiling water. Set aside for 10 minutes, add to mixture.
    Add flour, sugar, baking powder, and a dash of cinnamon.
    Blend well, and refrigerate for 15 minutes.
    Pour the mixture into an oven-proof bowl and bake it in the oven for 20 minutes or until slightly brown.
    Let it cool down before slicing it into squares and serving.
    Optional: Serve with vegan whipped cream.


    2 medium sweet potatoes
    1 large banana
    1/2 cup flour of choice
    1/4 cup coconut oil
    1/2 cup sugar/sweetener of choice (like stevia)
    1 teaspoon vanilla essence
    1/2 teaspoon agar agar
    1/2 baking powder
    1/4 cup soy milk
