Scramble Tofu

    Instructions

    Chop bell pepper and tomato.
    Dice tofu into cubes.
    In frying pan, saute onion and garlic in oil for 1 minute.
    Add bell pepper, tomato, and tofu. Stir 2 minutes.
    Salt and pepper to taste.
    Variation: Sprinkle cayenne or chili pepper to make spicy.

    Ingredients

    2 tablespoon olive oil
    2 garlic clove, minced
    1 medium firm tofu package, diced into cubes
    1 red, green , or yellow bell pepper, chopped
    1/2 onion, chopped
    1/3 cup carrots, chopped into small cubes
    1 tomato, diced
    salt and pepper

      Who doesn't love scrambled tofu?! This recipe is very simple and tasty. You can try adding a bit of curry powder or your choice of seasoning & spices to give it more flavor and extra kick. Or top it with some salsa. Yum.

      I've been making this every day for a week now. I concur, you'd do well to put some "kick" into it. I've also added broccoli.
