Scramble Tofu


2 tablespoon olive oil
2 garlic clove, minced
1 medium firm tofu package, diced into cubes
1 red, green , or yellow bell pepper, chopped
1/2 onion, chopped
1/3 cup carrots, chopped into small cubes
1 tomato, diced
salt and pepper


Chop bell pepper and tomato.

Dice tofu into cubes.

In frying pan, saute onion and garlic in oil for 1 minute.

Add bell pepper, tomato, and tofu. Stir 2 minutes.

Salt and pepper to taste.

Variation: Sprinkle cayenne or chili pepper to make spicy.
