Pineapple Fried Rice

    Cook the rice to the instructions of the package.
    Cube the tofu and pat it dry.
    Cut string beans into bite size pieces.
    Hallow out pineapple and cut into bite sized pieces.
    Finely chop sushi ginger.
    Sauté the garlic in 2 tablespoons of water. Add the tofu and 2 tablespoons of soy sauce to the pan.
    Remove tofu and place to the side.
    Add string beans in the pan with 3 tablespoons of water, and saute for 3 minutes
    Add in peas and 2 tablespoons of soy sauce. Cook until veggies are tender (about 5 minutes).
    Add rice to veggie mixture. Add pineapple (fruit and juice). Add ginger. Add soy sauce to taste.
    Scoop fried rice into pineapple halves. Garnish with scallion.


    2 cloves garlic
    20 string beans
    3/4 cup peas
    1 package firm tofu
    1 1/2 cup dry brown rice
    1 tablespoon pickled sushi ginger
    Soy sauce (gluten-free optional)
