    Soak cashews in water for 1 hour, then drain.
    Blend the base ingredients in blender. Add more dates if mixture it too dry.
    Make 6 small pie bases, and chill for at least one hour.
    For the filling, blend all the ingredient except the coconut oil and the lime juice.
    As the blender is on, gradually add the lime juice and then the coconut oil.
    Pour filling over the crust. Garnish with lime zest.
    Chill in the fridge for at least 3 hours or in the freezer for an hour.


    1 cup raw brazil nuts
    1/2 cup desiccated coconut
    1/3 cup dates

    2/3 cup raw cashews
    1 medium avocado
    1/3 maple syrup
    2/3 cup lime juice
    1/3 cup coconut oil
    lime zest
