Greens and Bean Bowl

    Start by setting up a vegetable steamer, leaving the water to come to the boil. Take your couscous and put it in a medium size saucepan. Fill it with cold water about 1 cm above the couscous, allowing it to absorb for several minutes.
    Check your steamer and once it starts to boil, add your spinach and leafy greens and lower the temperature slightly. Shake a teaspoon of salt over the vegetables and leave to steam.
    Next top your couscous with more water, about 2 cm above it, and bring to a boil. Stir until fully cooked and drain the water away, then place the couscous into a large mixing bowl.
    Your greens should be done at this point, so strain them and add to the bowl.
    Depending if you like your beans cooked, you can put them into the microwave for 3 mins and then mix it all together, or add them straight from the can. Add the sesame seeds and mix. Serve and enjoy.


    100 grams plain couscous
    100 grams leafy greens
    50 grams spinach
    1/2 can mixed taco beans in sauce
    1 teaspoon sesame seeds
