Fall Harvest Salad

    Mix all ingredients together in a large bowl.
    Serve and enjoy!


    For the salad:
    1 bunch kale or other dark greens, chopped
    1 cup carrots, shredded
    1 cup red cabbage, chopped
    1 cup Brussels sprouts leaves
    1/4 cup green onions, sliced
    1/3 cup dried cranberries
    1/3 sliced almonds

    For the pomegranate chia seed dressing:
    Juice from 1 pomegranate (about 1 cup)
    1 tablespoon apple cider vinegar
    2 tablespoon orange juice (preferably freshly-squeezed)
    2 teaspoon chia seeds
    1/8 teaspoon black pepper

    Serving Size

    1 cup
