Creamy Veggie Pasta
Ingredients
1/2 package spaghetti pasta (brown rice or quinoa)10 mushrooms
10 asparagus
15 string beans
2 cup spinach
3 cloves garlic
Italian spices
2 cup non-dairy milk
Instructions
Boil water in a pasta pot and a small pot.
Cook pasta to package directions.
Slice mushrooms, cut string beans in half, and cut asparagus into bite side pieces.
Add garlic and spices to boiled small pot of boiled water. Blanch string beans and then blanch the asparagus.
Add 3 tablespoons of water and mushroom to a small pot. Cook down.
Add 2 cups of non-dairy milk and spices to taste. Simmer for 15 minutes.
Add vegetables and sauce to pasta. Fold in spinach.
