    Instructions

    Preheat oven to 400F degrees. Mix dry ingredients in one bowl, and mix liquid ingredients in a separate bowl. Combine dry and liquid ingredients together and mix. Place mixture in greased muffin tin or baking pan. Bake 20 minutes.

    Ingredients

    1 1/2 cup yellow cornmeal
    1 1/2 cup whole wheat pastry flour
    1 tablespoon double acting baking soda
    1/2 teaspoon salt
    1 1/4 cup soymilk
    1/4 cup coconut, canola, or safflower oil
    1 cup maple syrup or brown rice syrup
