Many years ago, I saw an interview with Joan Baez when she was asked about vegetarianism. She said she was a vegetarian for a while but found it difficult to maintain a strict vegetarian diet when she was touring on the road. I rather doubt she is a committed vegetarian--perhaps she is one of those so-called "90% vegetarians." Perhaps, in her old age she became a vegetarian again.

In the late 90s I worked at a hotel in Iowa City, IA and I served a burger to Joan Baez. I guess she's converted since then.
