Nur eine vegane Option - Edit
Es gibt leider nur eine vegane Ramen Option, die war sehr gut mit viel Kimchi, aber auch sehr scharf. Der Service war eine 12/10, eine Freundin von mir hatte Geburtstag und daraufhin haben wir viele Kleinigkeiten umsonst bekommen. Allgemein sehr freundliche Erfahrungen. Als Veganer lohnt es sich jedoch nicht, dafür gibt es deutlich bessere Optionen in Hamburg

Very explicitly mentioned vegan or vegetarian dishes. You get so much food for a really good price. Gyoza were crispy and delicious.

Best Ramen - Edit
This is the ramen place I recommend to everyone coming to Hamburg. The staff is the kindest in town. They have to vegan options.

Staff deserves 5 ☆ - Edit
Japanese/Korean place close to the main station, menu isn't extensively large but they have 2 vegan ramen (the veggie ramen is also vegan) and the bibimbap without egg is probably vegan as well. Ramen wasn't mind-blowing but does its job when you're having cravings. They also have interesting lemonades and drinks, the mango rose one was nice. Just wanted to note that staff was super duper welcoming and adorable, I got a free scope of ice cream after my meal, unfortunately not vegan, so I had to reject, and then the waiter gave me 2 chupa chups when I payed my bill.
