Their dishes are plant-based (mostly vegan), fusion-inspired, handmade, and always seasonal. Think: small, layered plates, warm breads, fresh textures, surprising pairings. Every bite feels intentional – and personal.
What’s special here is not just what’s served, but how it’s served. You won’t find big menus or buffet lines. Instead, Waldmühle offers curated formats:
Waldtisch: a Friday/Saturday/Sunday evening pop-up with 9 plant-based courses and wine/non-alcoholic pairings. Intimate, max. 12 guests. Starts with a sound bath. Not a restaurant – a format.
RheingauBrunch: Sundays, with a set sequence of small seasonal dishes – no buffet, no choices, just arrival and enjoyment. Family- and kid-friendly, relaxed and grounding.
RheingauLunch: a weekday lunch menu (Mon–Thu), served as a 3-course plant-based meal. Perfect for locals, teams, or solo guests looking for something fresh and mindful.
RheingauRestaurant: opening soon (2026) – the long-term heart of the project.
Everything here is cooked and served with love, rooted in experience, and held together by a warm and attentive team. The location itself is worth the trip: surrounded by trees, birdsong, and the gentle hum of the old mill’s stream. You feel the care – from the plating to the playlists.
