Think Coffee - Edit
I had nitro coffees at quite a few Think Coffee's to power through jet lag and because nitro cold brew does not exist in the UK, so I was drinking it as much as possible. Honestly, the vegan food options didn't look super healthy to me so I just stuck to nitro cold brews with the occasional addition of oat milk to my drink. The nitro cold brews are OK, I found a place called Coffee Project on the Lower East Side that do a very nice oat nitro cold brew, but it was always a hike and these Think Coffee's are everywhere...

Nice, cozy coffee spot with a great selection of vegan baked goods like muffins, cookies and so on but also bagels with vegan cream cheese or vegan egg sandwich available

Think Coffee is a small chain of coffee shops that offers fair trade coffee, along with some side food. I counted at least four vegan pastries and two vegan savory sandwiches--including a vegan grilled cheese (available on gluten free bread) which I found quite satisfactory (I asked them to wipe down the grill before making the grilled cheese, and they accommodated me) . The setting is casual, with a bunch of tables to sit at indoors and a few outdoor tables as well; the place has a restroom for customers. If judged as a coffee place (rather than a restaurant), this place is quite nice.

None of the pastries are vegan, at least when I went. I got their vegan grilled cheese and it was kinda gross and very lackluster. See pic

Great vegan grilled cheese - Edit
Wish I knew what cheese they used. It was excellent. Their baked goods are tasty but a little pricy IMO. Grilled cheese is only $7 if you don’t put on anything else.
